I have lost my Notes from a couple of workshops I used to go to a year back, and was lucky to learn that the iPhone Backup Extractor was the only tool that recovered more files than the regular backup restore we are familiar with.

You can find all iTunes backups stored on your PC or Mac, by going to iTunes > Edit (from top menu) > Preferences > Devices tab.
Here you can see the available iTunes backups and the date when they were created.
Don't restore your backup with iTunes because it will restore your iDevice to the last backup!Whilst some might suggest you to restore your backup with iTunes, please acknowledge that it's not recommended to proceed this way, because your iDevice will restore to the moment it was backed up last.
This means you will lose all the data created after the backup was generated, and this can result in lost photos, contacts, videos and more. The safest way to recover your Notes or any other data from your iTunes or iCloud backup is to use the iPhone Backup Extractor.
As long as your Notes have been backed up, you can recover all your data by following these simple steps:
1. Click here to download and install the Lite version of the iPhone Backup Extractor.
The Lite version is limited to extracting only four files at a time. To remove this limitation, a license activation is required.

2. Extract your Notes
Once installed the iPhone Backup Extractor, the application will automatically look for iTunes or iCloud backups located in your default backup folder.
If you want to recover your Notes from an iCloud backup you should first generate a backup using the iPhone Backup Extractor. Follow the instructions from this guide to see how to download an iCloud backup file on your computer.
If you have multiple backups, you should select the one that contains your Notes, from the left window of the iPhone Backup Extractor.
To retrieve your lost Notes, look in the 'Overview' section and click on the Notes icon .
You can go also to the “App view” tab, then select “Apple Notes” and click on the number next to “All Notes”.
Choose the destination folder where you want to extract your data and then click 'OK'. The iPhone Backup Extractor will recover all your Notes and (including the deleted ones) from your iTunes or iCloud backup.
That's how easy and quick you can get back all your Notes and attachments. Now browse the folder where you've extracted your Notes, and find your valuable data.
You should be able to see all notes including the deleted ones.
This method is also useful when:
- you want to download your Notes on your computer or if you need to retrieve the files attached to your Notes
- you want to extract your Notes from devices with two-factor authentication enabled
- you need to extract your Notes from iTunes encrypted backups
- you want to get your Notes from the iCloud even you have no access to your iPhone
